Potato, Broccoli and Ham Frittata

Serves 2
 
Ingredients:
200g Spud Lite Potatoes –(Unpeeled, chopped, cooked and cooled)
2 cups broccoli florets
40g salt reduced or gluten free ham, finely chopped
2tsp plain or gluten free flour
2tbs skim milk
4x60g eggs
1tbs chopped basil
30g (1/4 cup) grated reduced fat cheese
freshly ground black pepper
 
Method:
Preheat oven to 170 degrees (fan forced)
Spray an oven proof dish with cooking spray
Place the potato, broccoli and ham in the dish
Put the flour in a bowl, gradually whisking in the milk
Add the eggs, basil and ½ the cheese
Season with pepper
Pour the egg mixture over the vegetables
Bake for 20-30 minutes
Sprinkle remaining cheese and set aside for 5 mins before serving.
